snow pea, tofu, and soba noodle salad

as i mentioned in my last post, i’ve been lucky enough to get some recommendations for recipes from friends and family lately. my mom sent me this one, and it’s absolutely delicious!

we made a couple of changes to the original recipe  by adding tofu to make it a little more filling, and substituting bean sprouts for pea sprouts. it made a super delicious spring dinner, especially now that it’s getting a little sunnier and warmer up here in seattle! i’m going to have to leave it at that for now, friends, and head back to the books. but make this dish. it’s amazing!

snow pea, tofu, and soba noodle salad

borrowed from vegetarian times
yields 4 servings

  • peanut sauce
  • 3/4c light coconut milk
  • 1/3c peanut butter
  • 4t brown sugar
  • 1T soy sauce
  • 1/2t thai red curry paste (or more, if you want it to be spicier)
  • salad
  • 4oz soba noodles
  • 2T toasted sesame oil
  • 12oz firm tofu, cubed
  • 3oz or 1c snow peas, washed and trimmed
  • 1T cilantro, chopped
  • 1t green onion, chopped
  • 2c bean sprouts
  • 1/2 red bell pepper, chopped
  • 16 leaves of butter lettuce, washed and torn

  1. peanut sauce: whisk together the coconut milk, peanut butter, brown sugar, soy sauce, and red curry paste
  2. salad: boil water for the soba noodles
  3. heat a frying pan over medium heat and add the toasted sesame oil
  4. once hot, add the tofu cubes and allow to fry for approx 5 minutes, then turn and allow to fry for another 5 mins before removing them from the pan
  5. meanwhile, add the soba noodles to the boiling water and cook until tender, adding the snow peas to the water 2 minutes before the noodles are done
  6. strain the noodles and snow peas and run them under cold water to stop them from continuing to cook
  7. in a large bowl, toss the noodles and snow peas with 1/2c peanut sauce, cilantro, and green onions
  8. then add the bean sprouts, red bell pepper, and tofu, tossing more to combine
  9. divide the lettuce between four bowls and place the noodle mixture on top
  10. drizzle more peanut sauce on top and enjoy!
