i think we can all agree that it’s officially holiday season. and what that means for many of us (or most of us, i’m guessing, especially if you’re reading this site) is baking tons of cookies. my favorites are sugar cookies and krumkakes (traditional norwegian cookies).
whew, it’s been a whirlwind couple of weeks! finals are done, one quarter (out of 6) of grad school is complete, we went to victoria on a spur of the moment mini-vacation, then we packed our bags, hopped a flight, and we’re back in ca!

Hi my fellow eclaire readers. As a long time friend of Emilie’s and a reader of her blog, I thought since Emilie is in the midst of finals and I was making my favorite holiday cookies now would be a good time for a guest post. These seven layer (rainbow) cookies are my favorite holiday cookies because they meet all my requirements for a great holiday cookie:
- They are a little labor intensive so you won’t make them year round
- Not everyone makes them
- They taste great
- They look festive
as a vegetarian, i always have a challenging time deciding what to make for a main course on thanksgiving, christmas, and other traditionally meat-centered holidays.
